This hearty Kielbasa Soup with Potatoes is a comforting and easy-to-make meal perfect for chilly days. Loaded with smoky kielbasa sausage, tender potatoes, and flavorful vegetables, it’s a one-pot dish that the whole family will love. Ingredients
- 1 tbsp olive oil or butter
- 1 lb kielbasa sausage, sliced
- 1 large onion, diced
- 2-3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 4-5 medium potatoes, peeled and cubed
- 2-3 carrots, sliced
- 2 celery stalks, sliced
- 1 tsp smoked paprika (optional, for extra flavor)
- 1 bay leaf
- Salt and black pepper, to taste
- 1 cup kale or spinach, chopped (optional for extra greens)
- Fresh parsley, chopped (for garnish)
Instructions
- Sauté the Kielbasa: In a large pot or Dutch oven, heat the olive oil or butter over medium heat. Add the sliced kielbasa and cook for about 3-4 minutes, until lightly browned. Remove the kielbasa from the pot and set aside.
- Cook the Vegetables: In the same pot, add the onion, carrots, and celery. Cook for 5-6 minutes, stirring occasionally, until the vegetables begin to soften. Add the garlic and cook for an additional minute.
- Add Potatoes and Broth: Pour in the chicken or vegetable broth, then add the cubed potatoes, smoked paprika, and bay leaf. Season with salt and pepper to taste. Stir everything together and bring the soup to a gentle boil.
- Simmer: Reduce the heat to low and let the soup simmer for 20-25 minutes, or until the potatoes and carrots are tender.
- Add Kielbasa and Greens: Return the browned kielbasa to the pot and add the chopped kale or spinach (if using). Simmer for an additional 5 minutes to let the flavors meld together.
- Serve and Garnish: Remove the bay leaf, taste for seasoning, and adjust as needed. Ladle the soup into bowls and garnish with fresh parsley.
