Salisbury Steak with Garlic Mashed Potatoes and Corn

For the Garlic Mashed Potatoes:

  • 1 1/2 lbs potatoes (Yukon Gold or Russet, peeled and cubed)
  • 3 cloves garlic, peeled
  • 1/2 cup milk (or heavy cream for extra richness)
  • 2 tbsp butter
  • Salt and pepper, to taste

For the Corn:

  • 1 1/2 cups fresh or frozen corn kernels
  • 1 tbsp butter
  • Salt and pepper, to taste

Directions for Salisbury Steak with Garlic Mashed Potatoes and Corn

Step 1: Prepare the Salisbury Steak Patties

  1. In a mixing bowl, combine the ground beef, breadcrumbs, egg, chopped onion, Worcestershire sauce, garlic powder, salt, and pepper.
  2. Mix until well-combined but do not overmix, as this can make the patties tough.
  3. Form the mixture into 4-5 oval patties.

Step 2: Sear the Patties

  1. In a large skillet over medium-high heat, add the olive oil.
  2. Place the patties in the skillet and cook for 3-4 minutes on each side, until browned. (They don’t need to be fully cooked yet as they’ll finish cooking in the gravy.)
  3. Remove the patties from the skillet and set aside.

Step 3: Make the Gravy

  1. In the same skillet, melt the butter over medium heat.
  2. Add the sliced onions and mushrooms and sauté until softened, about 5-6 minutes.
  3. Sprinkle the flour over the onions and mushrooms, stirring to coat.
  4. Slowly add the beef broth and Worcestershire sauce, stirring constantly until the gravy thickens.
  5. Season with salt and pepper to taste.
  6. Return the patties to the skillet, nestling them into the gravy. Cover and let them simmer for 10-12 minutes, or until the patties are fully cooked and the gravy is thickened.

Step 4: Prepare the Garlic Mashed Potatoes

  1. In a saucepan, cover the cubed potatoes and garlic cloves with water and bring to a boil.
  2. Reduce the heat and simmer for about 15 minutes, or until the potatoes are fork-tender.
  3. Drain the potatoes and garlic, then return them to the pan.
  4. Add the butter and milk, mashing until smooth. Add salt and pepper to taste.

Step 5: Prepare the Corn

  1. In a small saucepan, melt the butter over medium heat.
  2. Add the corn and cook, stirring occasionally, until heated through (about 3-5 minutes).
  3. Season with salt and pepper to taste.

Step 6: Serve and Enjoy

Serve each plate with a Salisbury steak patty topped with mushroom gravy, a generous scoop of garlic mashed potatoes, and a side of buttery corn. Garnish with fresh parsley if desired.
