Directions

Prepare the Meatloaf Mixture:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Sauté the Onion and Garlic: In a small skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté for 3-5 minutes, until softened and fragrant. Let it cool slightly before adding it to the meat mixture.
  3. Mix the Ingredients: In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, sautéed onions and garlic, oregano, basil, salt, pepper, and parsley. Use your hands or a spoon to mix everything until just combined—be careful not to overmix, as this can make the meatloaf tough.
  4. Form the Meatloaf: Transfer the meat mixture onto the prepared baking sheet or into the loaf pan. Shape it into a loaf, ensuring it’s even on all sides.

Make the Glaze:

  1. Combine the Glaze Ingredients: In a small bowl, mix together the ketchup, Dijon mustard, honey, and garlic powder. Stir until smooth.
  2. Top the Meatloaf with Glaze: Brush the glaze generously over the top of the meatloaf, covering the surface evenly.

Bake the Meatloaf:

  1. Bake the Meatloaf: Place the meatloaf in the oven and bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C) and the glaze is bubbly and caramelized.
  2. Rest Before Serving: Once baked, remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing. This will help retain its juices and keep it from falling apart.

Serve and Enjoy:

  1. Serve: Slice the meatloaf and serve it with your favorite sides. It pairs wonderfully with mashed potatoes, steamed vegetables, or a simple salad.

Tips & Variations

  • Make it Low-Carb: For a low-carb version, swap the breadcrumbs for almond flour or crushed pork rinds.
  • Add Veggies: You can sneak in some finely grated vegetables like carrots or zucchini into the meatloaf mixture to add extra nutrition and moisture.
  • Make it Spicy: Add a pinch of red pepper flakes or some diced jalapeños to the meat mixture for a little heat.
  • Substitute Ground Turkey: If you prefer, you can use ground turkey instead of chicken for a similar taste and texture.
