- Season the Shrimp
In a large bowl, toss the shrimp with the Cajun seasoning until fully coated. Adjust the amount based on how spicy you’d like the dish to be. - Sear the Shrimp
In a large skillet over medium-high heat, add the olive oil and 2 tablespoons of butter. When the butter has melted, add the seasoned shrimp in a single layer. Sauté for 2–3 minutes per side until the shrimp are pink and opaque. Remove from the skillet and set aside. - Make the Sauce
In the same skillet, add the remaining butter and minced garlic. Sauté for about 1 minute until the garlic is fragrant (be careful not to let it burn). Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the pan. Let it simmer for 2–3 minutes to slightly reduce the sauce. - Combine Shrimp and Sauce
Return the shrimp to the skillet and toss to coat in the sauce. Let it cook for another 1–2 minutes to warm the shrimp and blend flavors. Stir in the fresh parsley and adjust seasoning with salt and pepper as needed. - Serve
Serve the Cajun shrimp scampi over pasta, rice, or with crusty bread to soak up the sauce. Garnish with extra parsley and lemon wedges if desired.
