Step 1: Prepare the Potatoes

  1. Preheat the Oven
    Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Wash and Cut the Potatoes
    Scrub the potatoes thoroughly under running water to remove any dirt. Pat them dry with a kitchen towel. Cut each potato into wedges (about 8 wedges per potato) for even cooking.

Step 2: Season the Potatoes

  1. Mix the Seasoning
    In a large bowl, combine the olive oil, minced garlic, garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and black pepper. Stir until well combined.
  2. Coat the Potatoes
    Add the potato wedges to the bowl and toss until they are evenly coated with the seasoning mixture.

Step 3: Bake the Potato Wedges

  1. Arrange on Baking Sheet
    Spread the seasoned potato wedges in a single layer on the prepared baking sheet. Make sure they are not overcrowded to ensure they crisp up nicely.
  2. Add Parmesan
    Sprinkle the grated Parmesan cheese evenly over the potato wedges.
  3. Bake
    Bake in the preheated oven for 25–30 minutes, turning halfway through, until the wedges are golden brown and crispy. You can broil them for an additional 2–3 minutes at the end for extra crispiness if desired.
