Directions for Making Loaded Potato Soup

1. Prepare the Ingredients

Start by peeling and dicing the potatoes. Chop the onion and mince the garlic. Set these ingredients aside.

2. Sauté the Aromatics

In a large pot or Dutch oven, heat the olive oil or butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

3. Cook the Potatoes

Add the diced potatoes to the pot, along with the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.

4. Blend the Soup

Once the potatoes are cooked, use a potato masher to mash some of the potatoes in the pot for a thicker texture, or use an immersion blender for a smoother consistency. If you prefer a chunkier soup, you can mash just a portion of the potatoes.

5. Add Cream and Cheese

Stir in the heavy cream, shredded cheddar cheese, crumbled bacon, garlic powder, onion powder, smoked paprika (if using), and season with salt and pepper to taste. Continue to cook over low heat until the cheese is melted and the soup is heated through.

6. Serve

Ladle the loaded potato soup into bowls and top with additional shredded cheese, crumbled bacon, and chopped green onions. Enjoy hot!
