Directions for Making Healthy Steak Fajita Roll-Ups
1. Marinate the Steak
In a mixing bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Add the sliced steak to the bowl, ensuring it’s well-coated in the marinade. Allow the steak to marinate for at least 15 minutes, or up to 2 hours in the refrigerator for more flavor.
2. Cook the Vegetables
Heat a large skillet or grill pan over medium-high heat. Add the sliced onions and bell peppers, cooking for about 5-7 minutes, or until they are tender and slightly charred. Remove the vegetables from the pan and set them aside.
3. Cook the Steak
In the same skillet, add the marinated steak and cook for 3-5 minutes, or until the steak is cooked to your desired level of doneness. If using flank steak, be careful not to overcook it, as it can become tough.
4. Assemble the Roll-Ups
To assemble, place a tortilla or lettuce leaf on a flat surface. Layer with a portion of the cooked steak, sautéed vegetables, and avocado slices. Roll tightly, tucking in the sides as you go.
5. Serve
Slice the roll-ups in half and serve with a side of Greek yogurt or sour cream for dipping. Garnish with chopped cilantro and lime wedges for an extra burst of flavor.
