Step 1: Prepare the Mashed Potatoes
- Place the potato chunks in a large pot, cover them with cold water, and add a pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.
- Drain the potatoes and return them to the pot. Add the heavy cream, sour cream (if using), and butter. Mash the potatoes until smooth and creamy, adding salt and pepper to taste. Cover to keep warm while you cook the steak bites.
Step 2: Cook the Steak Bites
- Season the steak cubes with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat. Add the steak cubes in a single layer (you may need to cook in batches). Sear the steak bites for 2-3 minutes on each side, until nicely browned and cooked to your desired level of doneness. Remove from the skillet and set aside.
- In the same skillet, reduce the heat to medium, add the butter, and let it melt. Stir in the minced garlic, thyme, and rosemary. Sauté for about 1 minute, until the garlic is fragrant.
- Return the steak bites to the skillet and toss them in the garlic butter for an additional 1-2 minutes, ensuring each piece is coated in the flavorful sauce.
Step 3: Serve
- Plate the mashed potatoes, then top with the garlic butter steak bites. Spoon any remaining garlic butter sauce over the steak bites and garnish with fresh parsley.
Tips and Variations
- Steak Choice: Sirloin is affordable and flavorful, but if you want something extra tender, ribeye or tenderloin are also great options.
- Creamier Potatoes: For extra creamy mashed potatoes, consider using a potato ricer or food mill to achieve a smooth texture.
- Herb Substitutes: If you don’t have fresh thyme or rosemary, dried herbs work well too. Just remember to use half the amount of dried herbs, as they are more concentrated.
- Add Mushrooms: Sautéed mushrooms can add even more depth to the dish. Simply cook them in the garlic butter after the steak for a delicious addition.
