For the Toppings:
- 200g (7 oz) kielbasa sausage, sliced into 1/4 inch pieces
- 200g (7 oz) shrimp, peeled and deveined
- 2 large eggs
- 2 tablespoons vegetable oil, divided
- Green onions, sliced for garnish
- Sesame seeds, for garnish
- Optional: Additional vegetables like sliced bell peppers, snap peas, or spinach
Instructions:
1. Prepare the Soft-Boiled Eggs:
- Bring a pot of water to a boil. Gently add the eggs and cook for 6-7 minutes for a soft-boiled consistency.
- Remove the eggs and place them in an ice water bath to stop the cooking process. Once cool, peel the eggs and set aside.
2. Cook the Noodles:
- In a large pot of boiling water, cook the noodles according to the package instructions until al dente.
- Drain and rinse under cold water to stop the cooking process. Set aside.
3. Make the Sauce:
- In a small bowl, mix together the soy sauce, oyster sauce, chili oil, sesame oil, brown sugar, minced garlic, and grated ginger. Adjust the seasoning according to your taste. Set aside.
