These Pineapple Christmas Balls are sweet, tropical delights that combine crushed pineapple, coconut, and cream cheese, all rolled into bite-sized treats. They’re easy to make and add a touch of cheer to any holiday dessert table!


Ingredients

  • 1 cup crushed pineapple, drained well
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups shredded coconut (sweetened or unsweetened, your choice)
  • 1/2 cup chopped pecans (or walnuts)
  • 1 tsp vanilla extract
  • Extra shredded coconut for rolling (optional)

Instructions

  1. Prepare the Pineapple Mixture
    In a large mixing bowl, combine the softened cream cheese and drained crushed pineapple. Mix until well combined and smooth.
  2. Add Sugar and Flavor
    Gradually add the powdered sugar to the mixture, stirring well after each addition. Once combined, add the vanilla extract and mix until smooth.
  3. Incorporate Coconut and Nuts
    Fold in the shredded coconut and chopped pecans until evenly distributed throughout the mixture.
  4. Chill the Mixture
    Cover the bowl with plastic wrap and refrigerate the mixture for at least 1 hour. This will make it easier to handle when forming the balls.
  5. Form the Balls
    Once chilled, scoop out tablespoon-sized portions of the mixture and roll them into balls. If desired, roll each ball in additional shredded coconut to coat.
  6. Chill Again
    Place the formed balls on a parchment-lined baking sheet and return them to the refrigerator for another 30 minutes to firm up.
