Cream of Mushroom Soup Recipe
Ingredients
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 lb (450 g) mushrooms, sliced (button, cremini, or a mix for extra flavor)
- 1/4 cup all-purpose flour (for thickening)
- 4 cups (1 liter) chicken or vegetable broth
- 1 cup heavy cream (or half-and-half for a lighter version)
- 1/2 tsp dried thyme (or 1 tsp fresh thyme)
- Salt and pepper, to taste
- Optional garnish: Fresh parsley, chopped
Instructions
Step 1: Sauté the Vegetables
- Melt Butter and Oil
In a large pot, heat the butter and olive oil over medium heat until melted. - Cook Onion and Garlic
Add the diced onion and cook for 3–4 minutes until softened and translucent. Stir in the minced garlic and cook for another 1 minute. - Add the Mushrooms
Add the sliced mushrooms to the pot and cook for about 5–7 minutes until they release their moisture and begin to turn golden. Stir occasionally to ensure even cooking.
