How to Make Vegetable Beef Soup
Step 1: Sear the Beef
- Heat Oil: In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Add Beef: Season the beef stew meat with salt and pepper. Add it to the pot and sear on all sides until browned, about 5-6 minutes. Remove the beef from the pot and set aside.
Step 2: Sauté the Aromatics and Vegetables
- Add Onion and Garlic: In the same pot, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and sauté for another 30 seconds, until fragrant.
- Add Carrots, Celery, and Bell Pepper: Stir in the carrots, celery, and bell pepper, and cook for 4-5 minutes until they begin to soften.
Step 3: Add Broth and Simmer
- Combine Ingredients: Return the beef to the pot along with the diced potatoes, green beans, diced tomatoes, beef broth, thyme, basil, and oregano.
- Bring to a Boil: Stir everything together and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 45-60 minutes, or until the beef is tender and the flavors have melded together.
