Step-by-Step Guide to Cooking Ribeye Steak
Step 1: Prepare the Steak
- Bring to Room Temperature: Remove the ribeye from the fridge about 30 minutes before cooking. This helps the steak cook evenly.
- Season Generously: Pat the steak dry with paper towels to remove excess moisture. Season both sides with kosher salt and freshly ground black pepper. A generous seasoning will create a flavorful crust.
Step 2: Heat the Pan
- Preheat: Place a cast iron skillet over medium-high heat and let it get very hot—this will help you achieve a good sear.
- Add Oil: Pour in the oil and let it heat until it shimmers but isn’t smoking. This signals it’s ready for searing.
Step 3: Sear the Steak
- Place the Steak: Gently place the steak in the hot skillet, laying it away from you to prevent oil splatter.
- Sear Without Moving: Let the steak sear for about 2-3 minutes on each side until it forms a golden-brown crust. Avoid moving the steak around during this time.
- Flip and Sear the Other Side: Flip the steak and cook for another 2-3 minutes on the other side. For a thicker steak, add an extra minute per side.
Step 4: Add Butter and Herbs
- Add Butter and Aromatics: Reduce the heat to medium, then add the butter, garlic, and fresh herbs to the skillet.
- Baste the Steak: Tilt the skillet slightly to gather the melted butter at one end, then use a spoon to baste the butter over the steak. This adds moisture and flavor, enhancing the steak’s richness.
