Instructions
- Prepare the Chicken: Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with a paper towel. Use a sharp knife to cut a pocket into the side of each breast, being careful not to cut all the way through.
- Make the Broccoli Filling: In a mixing bowl, combine the chopped broccoli, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Stuff the Chicken: Carefully spoon the broccoli and cheese mixture into each chicken breast pocket. Use toothpicks to secure the edges if needed to prevent the filling from spilling out.
- Season and Bake: Place the stuffed chicken breasts in a baking dish. Brush each with olive oil or melted butter, and sprinkle with a bit of paprika or Italian seasoning if desired. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
- Serve: Let the chicken rest for a few minutes before serving. Enjoy warm, with any side dish of your choice!
