Instructions

  1. Prepare the Chicken: Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with a paper towel. Use a sharp knife to cut a pocket into the side of each breast, being careful not to cut all the way through.
  2. Make the Broccoli Filling: In a mixing bowl, combine the chopped broccoli, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Stuff the Chicken: Carefully spoon the broccoli and cheese mixture into each chicken breast pocket. Use toothpicks to secure the edges if needed to prevent the filling from spilling out.
  4. Season and Bake: Place the stuffed chicken breasts in a baking dish. Brush each with olive oil or melted butter, and sprinkle with a bit of paprika or Italian seasoning if desired. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
  5. Serve: Let the chicken rest for a few minutes before serving. Enjoy warm, with any side dish of your choice!
