- Preheat Oven: Preheat your oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
- Mix Ingredients: In a large bowl, combine the mashed potatoes, eggs, shredded cheese, sour cream, milk, green onions, salt, pepper, garlic powder, and onion powder. Mix until well combined.
- Add Optional Ingredients: Fold in any extra add-ins like crumbled bacon or ham if desired.
- Fill Muffin Tin: Spoon the mashed potato mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake: Bake for 25-30 minutes, or until the tops are golden brown and the muffins are set. Let them cool slightly before removing from the tin.
