Instructions
Step 1: Boil the Eggs
Start by boiling the eggs. Place the eggs in a medium saucepan, cover with water, and bring to a boil. Once the water reaches a rolling boil, turn off the heat, cover the pan, and let the eggs sit for 10-12 minutes for hard-boiled perfection. Once done, transfer the eggs to an ice bath to cool for easier peeling.
Step 2: Prepare the Egg Salad
Peel the eggs, then mash them with a fork or a potato masher in a mixing bowl until you reach your desired consistency (some prefer chunks, while others like a finer texture). Add in the mayonnaise, Dijon mustard, chives (if using), salt, and pepper. Mix until everything is well combined.
Step 3: Assemble the Sandwich
Spread a generous portion of egg salad onto a slice of bread, then top with lettuce if desired. Place another slice of bread on top, gently press down, and cut in half for easy serving. Enjoy!
