Banana oatmeal muffins

Prepare the Wet Ingredients:

  1. Mash the Bananas: In a large bowl, mash the ripe bananas with a fork until smooth. A few small chunks are okay, but make sure most of the banana is mashed.
  2. Mix Wet Ingredients: Add the egg, honey (or maple syrup), milk, applesauce (or oil), and vanilla extract to the mashed bananas. Whisk until everything is well combined.

Prepare the Dry Ingredients:

  1. Combine Dry Ingredients: In a separate bowl, mix the oats, whole wheat flour, all-purpose flour, baking soda, cinnamon, and salt. Stir to combine.

Combine Wet and Dry Ingredients:

  1. Mix Together: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix the batter. If you are adding any mix-ins (like nuts, chocolate chips, or dried fruit), fold them in gently.

Fill the Muffin Tin:

  1. Spoon the Batter: Divide the batter evenly among the muffin cups, filling each one about ¾ full. You should get about 10-12 muffins, depending on the size of your muffin tin.

Bake:

  1. Bake the Muffins: Place the muffin tin in the oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. The tops should be golden brown.

Cool:

  1. Cool the Muffins: Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
