Directions:

1. Prepare the Apple Filling:

Start by making the apple filling. In a medium-sized skillet, melt 1 tablespoon of butter over medium heat. Add the diced apples, 1/4 cup brown sugar, 1 teaspoon cinnamon, and 1/2 teaspoon nutmeg. Stir to combine, and cook for about 5-7 minutes, until the apples begin to soften and the sugar forms a syrup.

Sprinkle 1 tablespoon of flour over the apples and stir well. This will help thicken the filling. Let it cook for another 2-3 minutes until the mixture thickens, and then remove the skillet from the heat. Stir in 1 teaspoon of vanilla extract, and set the apple mixture aside to cool.

2. Make the Biscuit Dough:

In a large mixing bowl, whisk together 2 cups of flour, 1/4 cup of granulated sugar, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/2 teaspoon of cinnamon.

Add the cold cubed butter to the dry ingredients. Use a pastry cutter, forks, or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs. You want some pea-sized pieces of butter to remain, as this will help make the biscuits light and flaky.

Pour in the buttermilk and 1 teaspoon vanilla extract, and stir gently until the dough just comes together. Be careful not to overwork the dough; it should be slightly sticky but hold together.

3. Roll and Assemble the Biscuits:

Turn the dough out onto a floured surface and gently knead it a few times to bring it together. Roll the dough out to about 1/2-inch thickness.

Spoon a small amount of the cooled apple filling into the center of each biscuit. Fold the edges of the dough over the apples, pinching the sides together to seal them into little pockets. You can also fold the dough in half like a turnover if you prefer a more rustic look.

Place the filled biscuits onto a baking sheet lined with parchment paper, making sure they are close together but not touching.

4. Bake the Biscuits:

Preheat the oven to 375°F (190°C). Bake the biscuits for 15-20 minutes, or until the biscuits are golden brown and cooked through.

Once baked, remove the biscuits from the oven and allow them to cool for a few minutes on the baking sheet.

5. Prepare the Glaze:

While the biscuits are cooling, whisk together the powdered sugar, milk, and vanilla extract in a small bowl. Drizzle the glaze over the warm biscuits for a sweet finishing touch.
