- Prepare the Ingredients
Make sure all your ingredients are prepped and ready to go. This dish comes together quickly, so having everything ready is key. - Cook the Shrimp
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and season with a little salt and pepper. Cook for about 2-3 minutes until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside. - Sauté Aromatics
In the same skillet, add the remaining tablespoon of oil. Add the diced onion and sauté for 2-3 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant. - Add Vegetables
Add the mixed vegetables to the skillet and cook for another 2-3 minutes until heated through. If using frozen vegetables, ensure they are fully thawed and warmed. - Scramble the Eggs
Push the vegetable mixture to one side of the skillet. Pour the beaten eggs into the other side and scramble them until fully cooked, then mix everything together. - Combine with Rice
Add the cooked rice to the skillet, breaking up any clumps. Return the cooked shrimp to the skillet. Pour the soy sauce and oyster sauce (if using) over the rice and mix well to combine. Cook for an additional 2-3 minutes, stirring frequently, until everything is heated through. - Finish and Serve
Remove the skillet from the heat. Stir in the sliced green onions and adjust seasoning with salt and pepper to taste. Serve hot, garnished with lime wedges if desired.
