These Pineapple Christmas Balls are sweet, tropical delights that combine crushed pineapple, coconut, and cream cheese, all rolled into bite-sized treats. They’re easy to make and add a touch of cheer to any holiday dessert table!
Ingredients
- 1 cup crushed pineapple, drained well
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 2 cups shredded coconut (sweetened or unsweetened, your choice)
- 1/2 cup chopped pecans (or walnuts)
- 1 tsp vanilla extract
- Extra shredded coconut for rolling (optional)
Instructions
- Prepare the Pineapple Mixture
In a large mixing bowl, combine the softened cream cheese and drained crushed pineapple. Mix until well combined and smooth. - Add Sugar and Flavor
Gradually add the powdered sugar to the mixture, stirring well after each addition. Once combined, add the vanilla extract and mix until smooth. - Incorporate Coconut and Nuts
Fold in the shredded coconut and chopped pecans until evenly distributed throughout the mixture. - Chill the Mixture
Cover the bowl with plastic wrap and refrigerate the mixture for at least 1 hour. This will make it easier to handle when forming the balls. - Form the Balls
Once chilled, scoop out tablespoon-sized portions of the mixture and roll them into balls. If desired, roll each ball in additional shredded coconut to coat. - Chill Again
Place the formed balls on a parchment-lined baking sheet and return them to the refrigerator for another 30 minutes to firm up. - Serve
