Instructions

  1. Cook the Sausage
    In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set it aside.
  2. Sauté the Vegetables
    In the same pot, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add Pasta and Broth
    Pour in the chicken broth and bring to a boil. Add the pasta and Italian seasoning. Stir well, then reduce the heat to a simmer. Cover the pot and cook according to the pasta package instructions, usually around 10-12 minutes, stirring occasionally.

    Once the pasta is cooked, stir in the heavy cream and grated Parmesan cheese. Add the cooked sausage back into the pot. If using, fold in the fresh spinach until wilted. Season with salt and pepper to taste.
