Mozzarella Stuffed Soft Pretzels

Instructions

  1. Prepare the Dough
    In a large mixing bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes, or until foamy. Add the flour, salt, and melted butter, mixing until a dough forms.
  2. Knead the Dough
    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. If the dough is too sticky, add a little more flour as needed.
  3. Let the Dough Rise
    Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  4. Preheat the Oven
    Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper or grease them lightly.
  5. Prepare the Baking Soda Bath
    In a large pot, bring the 10 cups of water and baking soda to a boil.
  6. Shape the Pretzels
    Once the dough has risen, divide it into 8 equal pieces. Roll each piece into a long rope (about 18 inches long). Flatten the rope slightly, place a mozzarella stick in the center, and fold the dough over to encase the cheese. Pinch the edges to seal tightly and shape into a pretzel.
  7. Boil the Pretzels
    Carefully place each pretzel into the boiling baking soda bath, one or two at a time, for about 30 seconds. Remove with a slotted spoon and place on the prepared baking sheets.
  8. Egg Wash and Salt
    Brush each pretzel with the beaten egg and sprinkle with coarse sea salt.
  9. Bake
    Bake in the preheated oven for 12-15 minutes, or until golden brown.
  10. Cool and Serve
    Allow the pretzels to cool slightly before serving. Enjoy warm with your favorite dipping sauces!
