- Prepare the Dough
In a large mixing bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes, or until foamy. Add the flour, salt, and melted butter, mixing until a dough forms. - Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. If the dough is too sticky, add a little more flour as needed. - Let the Dough Rise
Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size. - Preheat the Oven
Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper or grease them lightly. - Prepare the Baking Soda Bath
In a large pot, bring the 10 cups of water and baking soda to a boil. - Shape the Pretzels
Once the dough has risen, divide it into 8 equal pieces. Roll each piece into a long rope (about 18 inches long). Flatten the rope slightly, place a mozzarella stick in the center, and fold the dough over to encase the cheese. Pinch the edges to seal tightly and shape into a pretzel. - Boil the Pretzels
Carefully place each pretzel into the boiling baking soda bath, one or two at a time, for about 30 seconds. Remove with a slotted spoon and place on the prepared baking sheets. - Egg Wash and Salt
Brush each pretzel with the beaten egg and sprinkle with coarse sea salt. - Bake
Bake in the preheated oven for 12-15 minutes, or until golden brown. - Cool and Serve
Allow the pretzels to cool slightly before serving. Enjoy warm with your favorite dipping sauces!
