Monterey Chicken Spaghetti

Instructions

  1. Cook the Chicken
    Season the chicken breasts with salt, pepper, and garlic powder. In a large skillet, heat olive oil over medium heat. Add the chicken and cook for 6-7 minutes on each side or until fully cooked and golden brown. Remove from the skillet and let it rest for a few minutes before slicing into strips.
  2. Prepare the Pasta
    While the chicken is cooking, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.
  3. Combine Ingredients
    In the same skillet used for the chicken, add the cooked spaghetti, barbecue sauce, diced tomatoes, and bacon bits (if using). Toss everything together over medium heat until well combined and heated through.
  4. Add the Chicken
    Layer the sliced chicken on top of the spaghetti mixture. Sprinkle the shredded Monterey Jack cheese and chopped green onions over the chicken.
  5. Melt the Cheese
    Cover the skillet with a lid and let it sit for about 3-5 minutes, or until the cheese is melted and bubbly.
  6. Serve
    Carefully serve the Monterey Chicken Spaghetti onto plates or a large serving dish. Garnish with fresh parsley if desired.
