- Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. - Make the Apple Filling
In a bowl, combine the diced apples, brown sugar, cinnamon, nutmeg (if using), and lemon juice. Mix well and set aside to let the flavors meld. - Prepare the Biscuit Dough
In a large mixing bowl, whisk together the flour, baking powder, salt, and granulated sugar. Add the cold cubed butter and cut it into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs. - Add Buttermilk
Pour in the buttermilk and stir until just combined. Do not overmix; the dough should be slightly sticky. - Roll Out the Dough
On a lightly floured surface, turn out the dough and gently knead it a few times until it comes together. Roll the dough out to about 1-inch thickness. - Cut the Biscuits
Use a biscuit cutter or a round glass to cut out biscuits from the dough. Gather any scraps, re-roll, and cut out more biscuits. You should have about 10-12 biscuits. - Fill the Biscuits
Place half of the biscuits on the prepared baking sheet. Spoon a generous tablespoon of the apple filling onto each biscuit. Top with the remaining biscuits and gently press the edges to seal. - Bake
Bake in the preheated oven for 15-20 minutes, or until the biscuits are golden brown. - Make the Glaze
While the biscuits are baking, whisk together the powdered sugar, milk, and vanilla extract (if using) in a small bowl until smooth. - Glaze the Biscuits
Once the biscuits are done baking, remove them from the oven and let them cool slightly. Drizzle the glaze over the warm biscuits. - Serve
