Instructions

  1. Preheat the Oven
    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Make the Apple Filling
    In a bowl, combine the diced apples, brown sugar, cinnamon, nutmeg (if using), and lemon juice. Mix well and set aside to let the flavors meld.
  3. Prepare the Biscuit Dough
    In a large mixing bowl, whisk together the flour, baking powder, salt, and granulated sugar. Add the cold cubed butter and cut it into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
  4. Add Buttermilk
    Pour in the buttermilk and stir until just combined. Do not overmix; the dough should be slightly sticky.
  5. Roll Out the Dough
    On a lightly floured surface, turn out the dough and gently knead it a few times until it comes together. Roll the dough out to about 1-inch thickness.
  6. Cut the Biscuits
    Use a biscuit cutter or a round glass to cut out biscuits from the dough. Gather any scraps, re-roll, and cut out more biscuits. You should have about 10-12 biscuits.
  7. Fill the Biscuits
    Place half of the biscuits on the prepared baking sheet. Spoon a generous tablespoon of the apple filling onto each biscuit. Top with the remaining biscuits and gently press the edges to seal.
  8. Bake
    Bake in the preheated oven for 15-20 minutes, or until the biscuits are golden brown.
  9. Make the Glaze
    While the biscuits are baking, whisk together the powdered sugar, milk, and vanilla extract (if using) in a small bowl until smooth.
  10. Glaze the Biscuits
    Once the biscuits are done baking, remove them from the oven and let them cool slightly. Drizzle the glaze over the warm biscuits.
  11. Serve
