Shrimp Tortellini with Lemon Garlic Cream Sauce

Instructions

Step 1: Cook the Tortellini

  1. Boil the Tortellini
    In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente. Fresh tortellini usually takes about 2-4 minutes, while frozen may take a bit longer. Reserve 1/2 cup of pasta cooking water and then drain the tortellini.

Step 2: Prepare the Shrimp

  1. Sauté the Shrimp
    In a large skillet, heat olive oil over medium-high heat. Season the shrimp with salt, pepper, and red pepper flakes (if using). Add the shrimp to the skillet in a single layer and cook for about 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3: Make the Lemon Garlic Cream Sauce

  1. Sauté Garlic
    In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  2. Add Cream and Lemon
    Pour in the heavy cream, lemon zest, and lemon juice. Stir to combine and let the mixture simmer for about 3-4 minutes, allowing it to thicken slightly.
  3. Add Cheese
    Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste. If the sauce is too thick, add a little of the reserved pasta cooking water to reach your desired consistency.

Step 4: Combine Everything

  1. Mix Tortellini and Shrimp
    Add the cooked tortellini and shrimp back to the skillet. Toss gently to coat everything in the creamy sauce, heating through for about 1-2 minutes.

Step 5: Serve

  1. Garnish and Enjoy
    Serve the shrimp tortellini hot, garnished with chopped fresh parsley and additional Parmesan cheese, if desired.
