Step 1: Cook the Tortellini
- Boil the Tortellini
In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente. Fresh tortellini usually takes about 2-4 minutes, while frozen may take a bit longer. Reserve 1/2 cup of pasta cooking water and then drain the tortellini.
Step 2: Prepare the Shrimp
- Sauté the Shrimp
In a large skillet, heat olive oil over medium-high heat. Season the shrimp with salt, pepper, and red pepper flakes (if using). Add the shrimp to the skillet in a single layer and cook for about 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
Step 3: Make the Lemon Garlic Cream Sauce
- Sauté Garlic
In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it. - Add Cream and Lemon
Pour in the heavy cream, lemon zest, and lemon juice. Stir to combine and let the mixture simmer for about 3-4 minutes, allowing it to thicken slightly. - Add Cheese
Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste. If the sauce is too thick, add a little of the reserved pasta cooking water to reach your desired consistency.
Step 4: Combine Everything
- Mix Tortellini and Shrimp
Add the cooked tortellini and shrimp back to the skillet. Toss gently to coat everything in the creamy sauce, heating through for about 1-2 minutes.
Step 5: Serve
- Garnish and Enjoy
Serve the shrimp tortellini hot, garnished with chopped fresh parsley and additional Parmesan cheese, if desired.
