Instructions
Step 1: Prepare the Zucchini
- Grate the Zucchini
Wash and dry the zucchini, then grate it using a box grater or food processor. Squeeze out excess moisture using a clean kitchen towel or paper towels.
Step 2: Preheat the Oven

Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
Step 3: Mix Wet Ingredients

In a large mixing bowl, whisk together the melted butter and sugar until well combined. Add the eggs, lemon zest, lemon juice, and vanilla extract, whisking until smooth.

Step 6: Bake the Bread

Pour the batter into the prepared loaf pan and smooth the top with a spatula. - Bake
Bake in the preheated oven for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: Cool and Glaze

Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely. - Make the Glaze (Optional)
In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Drizzle over the cooled bread for added sweetness and flavor.

- Slice and Enjoy
Once cooled and glazed, slice the Lemon Zucchini Heaven Bread and enjoy it plain or with a pat of butter.
