Cranberry Dijon Pork Loin Roast with Apple Cider Glaze

Instructions

Step 1: Prepare the Pork Loin

  1. Preheat the Oven
    Preheat your oven to 375°F (190°C).
  2. Season the Pork
    Pat the pork loin dry with paper towels. Season generously with salt and black pepper.
  3. Sear the Pork
    In a large oven-safe skillet, heat olive oil over medium-high heat. Add the pork loin and sear on all sides until golden brown, about 3–4 minutes per side. Remove the pork from the skillet and set aside.

Step 2: Make the Cranberry Dijon Glaze

  1. Combine Ingredients
    In a medium saucepan over medium heat, combine cranberries, Dijon mustard, brown sugar, apple cider vinegar, garlic powder, onion powder, thyme, and black pepper.
  2. Cook the Glaze
    Bring the mixture to a simmer, stirring occasionally until the cranberries burst and the glaze thickens slightly, about 5–7 minutes. Remove from heat.

Step 3: Roast the Pork Loin

  1. Glaze the Pork
    Place the seared pork loin back into the skillet. Brush half of the cranberry Dijon glaze over the pork.
  2. Roast in the Oven
    Transfer the skillet to the preheated oven and roast for about 1 hour, or until the internal temperature reaches 145°F (63°C). Brush the pork with additional glaze halfway through cooking.
  3. Rest the Roast
    Once cooked, remove the pork from the oven and let it rest for 10–15 minutes before slicing. This helps retain the juices.

Step 4: Prepare the Apple Cider Glaze

  1. Simmer the Cider
    In a small saucepan over medium heat, combine apple cider and maple syrup. Bring to a simmer.
  2. Thicken the Glaze
    If desired, add the cornstarch mixture to thicken the glaze. Stir constantly until the mixture thickens to your liking, about 2–3 minutes. Remove from heat.
