Instructions
Step 1: Prepare the Pork Loin
- Preheat the Oven
Preheat your oven to 375°F (190°C). - Season the Pork
Pat the pork loin dry with paper towels. Season generously with salt and black pepper. - Sear the Pork
In a large oven-safe skillet, heat olive oil over medium-high heat. Add the pork loin and sear on all sides until golden brown, about 3–4 minutes per side. Remove the pork from the skillet and set aside.
Step 2: Make the Cranberry Dijon Glaze
- Combine Ingredients
In a medium saucepan over medium heat, combine cranberries, Dijon mustard, brown sugar, apple cider vinegar, garlic powder, onion powder, thyme, and black pepper. - Cook the Glaze
Bring the mixture to a simmer, stirring occasionally until the cranberries burst and the glaze thickens slightly, about 5–7 minutes. Remove from heat.
Step 3: Roast the Pork Loin
- Glaze the Pork
Place the seared pork loin back into the skillet. Brush half of the cranberry Dijon glaze over the pork. - Roast in the Oven
Transfer the skillet to the preheated oven and roast for about 1 hour, or until the internal temperature reaches 145°F (63°C). Brush the pork with additional glaze halfway through cooking. - Rest the Roast
Once cooked, remove the pork from the oven and let it rest for 10–15 minutes before slicing. This helps retain the juices.
Step 4: Prepare the Apple Cider Glaze
- Simmer the Cider
In a small saucepan over medium heat, combine apple cider and maple syrup. Bring to a simmer. - Thicken the Glaze
If desired, add the cornstarch mixture to thicken the glaze. Stir constantly until the mixture thickens to your liking, about 2–3 minutes. Remove from heat.
