Instructions
Step 1: Marinate the Chicken
- Combine Spices and Marinade
In a small bowl, mix the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Drizzle the chicken with olive oil and lime juice, then sprinkle the spice mixture over the chicken, rubbing it in to coat evenly. - Marinate
Let the chicken marinate for at least 15 minutes at room temperature. For a deeper flavor, you can marinate the chicken for up to 2 hours in the refrigerator.
Step 2: Cook the Chicken
- Heat a Skillet
Heat a large skillet or grill pan over medium-high heat. Add a little olive oil to prevent sticking. - Cook the Chicken
Add the marinated chicken to the skillet and cook for about 5–7 minutes per side or until fully cooked and the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and let it rest for a few minutes. - Chop the Chicken
Once rested, chop the chicken into small, bite-sized pieces for easy taco filling.
Step 3: Warm the Tortillas
- Warm the Tortillas
Heat the corn tortillas on a dry skillet over medium heat for about 30 seconds per side or until they’re warm and slightly charred. Alternatively, wrap them in a damp paper towel and microwave for 15–20 seconds.
Step 4: Assemble the Tacos
- Fill the Tacos
Place a portion of the chopped chicken onto each tortilla. - Add Toppings
Top each taco with a sprinkle of chopped white onion, fresh cilantro, and crumbled Cotija cheese. Squeeze a bit of lime juice over each taco for extra zest.
