Directions for Making Zesty Lemon Butter Fish Fillet

1. Season the Fish

Pat the fish fillets dry with a paper towel and season both sides with salt and pepper. This helps ensure the fillets develop a nice crust when cooked.

2. Sear the Fish

Heat the olive oil in a large skillet over medium-high heat. Add the fish fillets to the pan (skin side down if they have skin) and cook for 3-4 minutes on each side, depending on thickness. The fish should be opaque and flaky but not overcooked. Transfer the fillets to a plate and set aside.

3. Make the Lemon Butter Sauce

In the same skillet, reduce the heat to medium and add the butter. Once the butter has melted, add the minced garlic and cook for 1-2 minutes, until fragrant but not browned. Stir in the lemon juice (and white wine if using), and let the sauce simmer for another 2-3 minutes, reducing slightly.

4. Return Fish to the Pan

Add the fish fillets back to the skillet, spooning some of the lemon butter sauce over each fillet. Allow the fish to warm up in the sauce for 1-2 minutes, then sprinkle with lemon zest and fresh parsley.

5. Serve

Serve the fish fillets with extra sauce drizzled over the top. Garnish with additional parsley and lemon wedges if desired.
