  1. Preheat your oven to 350°F (175°C).
  2. Prepare the filling: In a skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Combine ingredients: In a large mixing bowl, combine the shredded chicken, cooked onions and garlic, diced green chiles, 1 cup of shredded cheese, and 1/2 cup of sour cream. Season with salt and pepper to taste. Mix until well combined.
  4. Assemble the enchiladas: Pour a thin layer of green enchilada sauce into the bottom of your baking dish. Take one tortilla and spoon about 1/4 cup of the chicken mixture down the center. Roll up the tortilla and place it seam-side down in the baking dish. Repeat with the remaining tortillas and filling.
  5. Top with sauce and cheese: Pour the remaining enchilada sauce over the rolled tortillas, making sure they are evenly coated. Spread the remaining sour cream over the top, then sprinkle with the remaining shredded cheese.
  6. Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  7. Serve: Garnish with chopped cilantro and serve with lime wedges on the side.
