Step 1: Preheat Oven

Step 2: Prepare the Filling
- In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, shredded cheddar cheese, diced tomatoes with green chilies, green bell pepper (if using), onion powder, garlic powder, salt, and pepper.
- Mix until well combined.
Step 3: Layer the Casserole
- Spread a layer of the crushed Doritos (about half) evenly in the bottom of the prepared baking dish.
- Pour the chicken mixture over the Doritos layer, spreading it evenly.
Step 4: Top with More Doritos and Cheese
- Sprinkle the remaining Doritos on top of the chicken mixture, then add an additional layer of shredded cheese for extra gooeyness.
Step 5: Bake
- Bake the casserole in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
Step 6: Serve
- Garnish with fresh cilantro or green onions, if desired, and serve warm.
