Directions
Step 1: Prepare the Cauliflower Base
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Rice the cauliflower: Cut the cauliflower into florets and pulse in a food processor until it resembles rice (alternatively, use pre-riced cauliflower if available).
- Cook the cauliflower: Place the riced cauliflower in a microwave-safe bowl and microwave for 5-6 minutes until tender. Let it cool slightly.
- Drain excess moisture: Once cool, transfer the cauliflower to a clean kitchen towel and wring out as much water as possible. This step is essential to achieve a crispy texture.
Step 2: Make the “Dough”
- In a large bowl, combine the drained cauliflower, egg, 1 cup of mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix until fully incorporated.
- Transfer the mixture onto the prepared baking sheet. Shape it into a rectangle, about 1/4-inch thick, pressing down firmly to form an even layer.
Step 3: Bake and Add Toppings
- Bake the cauliflower base for 20-25 minutes, or until golden brown and set.
- Remove from the oven and sprinkle additional mozzarella cheese on top.
- Return to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.
Step 4: Serve and Enjoy
- Let the breadsticks cool slightly before slicing into strips.
- Garnish with fresh parsley or basil if desired and serve warm with marinara sauce or your favorite dipping sauce.
Tips and Tricks
- Squeeze Out Extra Water: Removing as much moisture as possible from the cauliflower is crucial for the best texture.
- Add Some Spice: A pinch of red pepper flakes adds a nice kick to the breadsticks.
- Use Different Cheeses: Try mixing mozzarella with provolone, or add a hint of cheddar for extra flavor.
Storage and Reheating
Store any leftover breadsticks in an airtight container in the fridge for up to 3 days. Reheat them in the oven at 350°F for 5-10 minutes, or until they’re warm and crispy.
