Directions
Step 1: Prepare the Chicken Filling
- Combine Ingredients: In a mixing bowl, combine the shredded chicken, ranch seasoning mix, cream cheese, shredded cheddar cheese, crumbled bacon, and sliced green onions (if using).
- Mix Well: Use an electric mixer or a spatula to mix everything together until well combined and creamy. Set aside.
Step 2: Make the Biscuits
- Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
- Cut in Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
- Add Milk: Pour in the milk and stir until just combined. Be careful not to overmix.
- Knead and Roll: Turn the dough out onto a lightly floured surface. Knead gently 2-3 times until it comes together, then roll out to about 1-inch thick.
Step 3: Cut the Biscuits
- Cut Out Biscuits: Use a biscuit cutter or a glass to cut out biscuits from the dough. You should get about 10-12 biscuits, depending on the size of your cutter.
- Arrange on Baking Sheet: Place the biscuits on the prepared baking sheet, leaving some space between them.
Step 4: Assemble the Crack Chicken Biscuits
- Fill Biscuits: Take a biscuit and place a generous spoonful of the chicken filling on top. If you want, you can also slice the biscuit in half and fill it, but this is optional.
- Top with Another Biscuit: Place another biscuit on top of the filling (if you sliced them) to create a sandwich. Alternatively, you can bake the biscuits and serve the chicken filling on the side.
Step 5: Bake
- Bake: Bake in the preheated oven for 15-20 minutes, or until the biscuits are golden brown and cooked through.
- Cool Slightly: Allow to cool for a few minutes before serving.
