1. Cook the Turkey Bacon
In a skillet over medium heat, cook the turkey bacon until crispy, about 3-4 minutes per side. Remove from the skillet and set aside on paper towels to drain excess fat.
2. Prepare the Bread
Spread mayonnaise (or mashed avocado) on one side of each slice of bread. This will be the outside of the sandwich for grilling.
3. Assemble the Sandwich
On the non-spread side of two slices of bread, layer the spinach, crispy turkey bacon, and shredded cheese. Season with a little salt and pepper. Top with the other two slices of bread, spread side up.
4. Grill the Sandwich
In the same skillet over medium heat, add olive oil or butter. Once hot, carefully place the sandwiches in the skillet. Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
5. Serve
Remove the sandwiches from the skillet and let them cool for a minute before slicing in half. Serve warm with your favorite side, such as a salad or chips.
