Kitchen Equipment Needed
- Large skillet
- Mixing bowls
- Baking dish
- Measuring cups and spoons
- Wooden spoon or spatula
- Knife and cutting board
Step-by-Step Directions
1. Prepare the Beef Filling
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and cook until softened, about 3-4 minutes.
- Add the minced garlic and cook for an additional 1 minute.
- Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 6-8 minutes.
- Stir in the taco seasoning and water, and cook for an additional 2 minutes, allowing the flavors to meld.
- Add the black beans, corn, and salsa (or diced tomatoes) to the beef mixture. Stir to combine and heat through. Remove from heat and set aside.
2. Assemble the Burritos
- Preheat your oven to 375°F (190°C).
- Place a large flour tortilla on a flat surface. Spoon a portion of the beef mixture onto the center of the tortilla.
- Sprinkle with shredded cheddar cheese.
- Fold in the sides of the tortilla and then roll it up from the bottom to the top, securing the filling inside. Place the burrito seam-side down in a baking dish.
- Repeat with the remaining tortillas and beef mixture.
3. Bake the Burritos
- Once all the burritos are assembled and placed in the baking dish, sprinkle the shredded mozzarella cheese evenly over the top.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly and the tortillas are crispy.
4. Serve
- Remove the burritos from the oven and let them cool slightly before serving.
- Garnish with chopped fresh cilantro and serve with sour cream, guacamole, and sliced jalapeños if desired.
Notes and Tips
- Cheese Variations: Feel free to use a blend of cheeses, such as Monterey Jack, pepper jack, or a Mexican cheese blend, for different flavor profiles.
- Beef Alternatives: You can substitute ground beef with ground chicken, turkey, or even a plant-based protein for a different twist.
- Make-Ahead: You can prepare the beef mixture ahead of time and store it in the refrigerator for up to 2 days. Assemble and bake the burritos when ready to serve.
- Freezing: Assemble the burritos and freeze them before baking. To cook from frozen, bake at 375°F (190°C) for 25-30 minutes.
