Directions

For the Cake:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or two 8-inch round cake pans and line with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. Cream Butter and Sugars: In a large bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Combine Wet and Dry Ingredients: Gradually add the flour mixture to the butter mixture, alternating with the sour cream, beginning and ending with the flour mixture. Stir in the mashed bananas until just combined.
  5. Bake: Pour the batter into the prepared pan(s) and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

For the Caramel Sauce:

  1. Melt the Sugar: In a medium saucepan, combine the sugar and water over medium heat. Cook, stirring occasionally, until the sugar dissolves and the mixture turns a deep amber color.
  2. Add Butter and Cream: Carefully add the butter and stir until melted. Slowly pour in the heavy cream, stirring constantly. Be careful, as the mixture will bubble up. Stir in the vanilla extract and salt.
  3. Cool: Remove from heat and let the caramel sauce cool slightly before pouring over the cake.
