Ingredients
- 1 pound of ground beef
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 can of diced tomatoes
- 1 can of kidney beans, drained and rinsed
- 1 can of corn, drained
- 1 packet of taco seasoning
- Salt and pepper to taste
Recipe Directions
- In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet with the ground beef. Cook until the onion is translucent.
- Transfer the cooked beef, onion, and garlic to a crockpot.
- Add the diced tomatoes (undrained), kidney beans, corn, and taco seasoning to the crockpot. Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Season with salt and pepper to taste before serving.

How to Store Leftovers
If you have any leftovers (though it’s doubtful there will be any!), you can store them in an airtight container in the refrigerator for up to 3-4 days. Simply reheat in the microwave or on the stovetop until warmed through before serving.
