2. Baked Chicken Parmesan
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions:
- Preheat your oven to 400°F (200°C).
- Season the chicken with salt and pepper. Dredge in flour, dip in beaten eggs, and then coat with a mixture of breadcrumbs and Parmesan cheese.
- Place the chicken on a greased baking sheet and bake for 20 minutes.
- Pour marinara sauce over the chicken, top with mozzarella, and bake for another 10 minutes, or until cheese is bubbly and chicken is cooked through.
- Garnish with fresh basil before serving.
3. Lemon Garlic Roasted Chicken
Ingredients:
- 4 chicken thighs (bone-in, skin-on)
- 4 chicken drumsticks
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
- 2 lemons, one juiced and one sliced
- Salt and pepper to taste
