2. Baked Chicken Parmesan

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken with salt and pepper. Dredge in flour, dip in beaten eggs, and then coat with a mixture of breadcrumbs and Parmesan cheese.
  3. Place the chicken on a greased baking sheet and bake for 20 minutes.
  4. Pour marinara sauce over the chicken, top with mozzarella, and bake for another 10 minutes, or until cheese is bubbly and chicken is cooked through.
  5. Garnish with fresh basil before serving.

3. Lemon Garlic Roasted Chicken

Ingredients:

  • 4 chicken thighs (bone-in, skin-on)
  • 4 chicken drumsticks
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 2 lemons, one juiced and one sliced
  • Salt and pepper to taste
