Instructions:

  1. Marinate the Pork Steaks:
    • In a mixing bowl, combine the soy sauce, honey (or brown sugar), minced garlic, grated ginger, rice vinegar, sesame oil, and chili flakes (if using). Whisk together until well combined.
    • Season the pork steaks lightly with salt and pepper. Remember that the soy sauce adds saltiness, so use salt sparingly.
    • Place the pork steaks in a large resealable plastic bag or a shallow dish. Pour the marinade over the steaks, ensuring they are well coated. Seal the bag or cover the dish.

  2. Prepare for Cooking:
    • Remove the pork steaks from the refrigerator about 30 minutes before cooking to allow them to come to room temperature. This helps in cooking them evenly.
  3. Cook the Pork Steaks:
    • Heat a large skillet or grill pan over medium-high heat. Add the vegetable oil to the pan.
    • Remove the pork steaks from the marinade, letting the excess drip off. Do not discard the marinade.
    • Place the pork steaks in the pan and cook for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C) for medium-rare. Adjust the cooking time if you prefer your pork more well-done.
    • While the pork is cooking, pour the remaining marinade into a small saucepan. Bring it to a boil, then reduce the heat and simmer for several minutes until the sauce thickens slightly. This will be your sauce for drizzling over the cooked steaks.
  4. Serve:
    • Once the pork steaks are cooked to your liking, remove them from the pan and let them rest for a few minutes. This helps in retaining their juices.
    • Slice the steaks against the grain for tenderness, if desired, or serve them whole.
    • Drizzle the reduced marinade sauce over the steaks.
    • Garnish with sliced green onions and sesame seeds.
