Instructions:

1. Prepare the Chicken:

  • Start by seasoning the chicken breasts or thighs with salt and pepper on both sides. This can be done according to your taste preferences, but a moderate amount works well.

2. Make the Teriyaki Sauce:

  • In a mixing bowl, combine soy sauce, pineapple juice, brown sugar, rice vinegar, minced garlic, and grated ginger. Stir the ingredients well until the sugar dissolves.

3. Marinate the Chicken:

  • Place the seasoned chicken in a resealable plastic bag or a shallow dish.
  • Pour around 3/4 cup of the teriyaki sauce over the chicken, ensuring it’s well coated.
  • Seal the bag or cover the dish with plastic wrap. Allow the chicken to marinate in the refrigerator for at least 30 minutes to an hour. For a more intense flavor, you can marinate it overnight.

4. Cooking the Chicken:

  • After marinating, remove the chicken from the fridge and let it sit at room temperature for about 10-15 minutes.
  • Preheat your grill or skillet to medium-high heat. Ensure it’s properly heated before adding the chicken.
  • Place the chicken on the grill or skillet. Cook each side for about 6-8 minutes, or until the chicken is fully cooked through. Cooking times may vary depending on the thickness of the chicken pieces.
  • While cooking, baste the chicken with the remaining teriyaki sauce from the marinade for added flavor and moisture.
