Chili Cheese Enchiladas

Instructions:

  1. Prepare the Chicken Filling:
    • Heat a skillet over medium heat. Add 2 tablespoons of vegetable oil.
    • Sauté the chopped onions and minced garlic until translucent.
    • Add the shredded chicken to the skillet, season with salt and pepper, and mix well. Cook for a few minutes until heated through. Set aside.
  2. Prepare the Chili Sauce:
    • In a saucepan, heat 2 tablespoons of vegetable oil over medium heat.
    • Stir in the flour and chili powder, whisking constantly for 1-2 minutes to form a roux.
    • Add the cumin powder, garlic powder, and dried oregano, stirring continuously for another minute.
    • Slowly pour in the chicken or vegetable broth, whisking constantly to avoid lumps.
    • Bring the sauce to a simmer and cook for 10-15 minutes until it thickens. Season with salt to taste. Set aside.
  3. Assemble the Enchiladas:
    • Preheat your oven to 350°F (175°C).
    • Warm the corn tortillas slightly to make them pliable. You can do this in a microwave wrapped in a damp paper towel or by lightly heating them in a skillet.
    • Pour a small amount of the red enchilada sauce into the bottom of a baking dish, just enough to coat it.
    • Dip each tortilla in the enchilada sauce to coat both sides.
    • Place a spoonful of the chicken filling and a sprinkle of shredded cheese down the center of each tortilla. Roll it tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas.
    • Pour the remaining enchilada sauce over the rolled tortillas, making sure they are all covered.
    • Sprinkle the top generously with the diced green chilies and the remaining shredded cheese.
  4. Bake the Enchiladas:
    • Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
    • Remove the foil during the last 5 minutes of baking to allow the cheese to lightly brown, if desired.
  5. Serve:
    • Once done, let the enchiladas cool for a few minutes before serving.
    • Garnish with chopped cilantro, diced tomatoes, sliced green onions, sour cream, or any other desired toppings.
