Instructions:

  1. Prepare the Beef:
    • Preheat your air fryer to 400°F (200°C).
    • Season the beef tenderloin with salt and pepper.
    • Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned.
    • Brush the beef with Dijon mustard and wrap it with prosciutto slices.
  2. Prepare the Mushroom Duxelles:
    • In the same skillet, add the mushroom duxelles mixture and cook until the mushrooms release their moisture and become golden brown. Set aside to cool.
  3. Assemble the Turnovers:
    • Roll out the puff pastry on a floured surface. Cut it into squares large enough to wrap around the beef.
    • Place a spoonful of the mushroom duxelles in the center of each pastry square.
    • Put the prosciutto-wrapped beef on top of the mushroom mixture.
    • Fold the pastry over the beef and seal the edges, forming a turnover.
  4. Brush with Egg Wash:
    • Beat the egg and water together to make an egg wash.
    • Brush the turnovers with the egg wash, which gives them a golden brown color when cooked.
  5. Air Fry the Turnovers:
    • Place the turnovers in the preheated air fryer basket, leaving space between them.
    • Air fry at 400°F (200°C) for 15-20 minutes or until the pastry is golden brown and the beef reaches your desired level of doneness.
  6. Serve:
    • Allow the turnovers to rest for a few minutes before slicing.
    • Serve the Beef Wellington Turnovers with your favorite sauce or side dishes.

Enjoy!
