Old-Fashioned Caramel Icing

Now milk and sugar should be very hot. Carefully pour the brown sugar out of the pan. Whisk together and cook for 15 minutes or until the mixture reaches the very soft ball stage. (Tested by dropping a little spoon into a small glass of cold water. When a small soft ball forms, it is ready.)

Remove it from heat and use an electric mixer, mix it in 1 and 1/2 of cold butter… Never ghee!

Continue to overcome until cool to spread consistency.

If you are too thick, you can slim by hitting in milk a tablespoon at a time.

Make sure your cake is completely chilled or that this heavy ice may cause the top to split. It will still taste great though!
