Butterscotch Shortbread Cookies

Instructions:

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
  3. In a separate bowl, whisk together the flour and salt (if using).
  4. Gradually add the dry ingredients to the butter-sugar mixture, mixing until a soft dough forms. Be careful not to overmix, as this can make the cookies tough.
  5. Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together.
  6. Roll out the dough to about 1/2 inch (1.3 cm) thickness.
  7. Use cookie cutters or a knife to cut out your desired shapes. You can use traditional shapes like rectangles or rounds, or get creative with different designs.
  8. Place the cookies on the prepared baking sheet, leaving a little space between them.
  9. Prick each cookie with a fork to create a decorative pattern and help them bake evenly.
  10. Bake in the preheated oven for about 15-20 minutes, or until the edges of the cookies are just starting to turn golden. The cookies will still be pale.
  11. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Then transfer them to a wire rack to cool completely.
  12. Once the cookies are completely cool, you can enjoy them. They will continue to firm up as they cool.

Shortbread cookies are versatile and can be customized with various additions, such as chocolate chips, chopped nuts, or citrus zest, to add different flavors and textures. They’re perfect for enjoying with a cup of tea or as a sweet treat for special occasions like holidays or afternoon tea.
