* Methods 

Diced butter and returning it to refrigerator while you prepare flour mixture. Place the flour, salt and sugar in the bowl of a food processor fitted with a steel blade and pulse to combine. Add butter and shortening. Pulse 8 to 12 times, to butter is the size of peas. Withed machine running, pour ice water down feed tube & pulse machine until the dough begins to form a ball. Placing on a floured board and roll to a ball. Wrapping in plastic wrap & refrigerate for 30 min.

Cut the dough in half. Rolling every piece on a well-floured board to a circle, roll from center to the edge, turning and flouring dough to make sure it doesn’t stick to board. Fold the dough in half, place it in a pie pan and unfold it to fit the pan. Repeat with top crust.
