Step 1: Prepare the Dough
- In a large mixing bowl, combine the warm water, sugar, and instant yeast. Let it sit for 5-10 minutes until the yeast activates and becomes frothy.
- Add the olive oil and salt to the yeast mixture, and gradually mix in the flour until a soft dough forms.
- Knead the dough on a lightly floured surface for 8-10 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
Step 2: Shape and Bake the Simit
- Preheat your oven to 400°F (200°C) and line baking sheets with parchment paper.
- Punch down the risen dough and divide it into 12 equal portions. Roll each portion into a long rope about 1/2 inch thick and 10-12 inches long.
- Join the ends of each rope to form a circle, gently pressing the ends together to seal. Repeat with the remaining portions of dough.
- In a small bowl, whisk the egg with a tablespoon of water to make an egg wash. Brush each Simit generously with olive oil, then dip them into sesame seeds to coat evenly.
- Place the coated Simit onto the prepared baking sheets and let them rest for 10-15 minutes.
- Brush the tops of the Simit with the egg wash and bake in the preheated oven for 18-20 minutes, or until golden brown and cooked through.
- Transfer the baked Simit to a wire rack to cool slightly before serving warm or at room temperature.
