Ingredients for Meatball Soup
For the Meatballs:
- 1 lb ground beef (or ground turkey)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley (fresh or dried)
- 1 egg
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Optional: 1 teaspoon Italian seasoning for added flavor
For the Soup:
- 6 cups beef or chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (with juice)
- 1 cup green beans (fresh or frozen)
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Optional: fresh herbs for garnish (like parsley or basil)
